That's how he has run his food truck, The Bearded Bear BBQ & Catering, since hitting the streets in 2023. And that's how he is running his new restaurant in Union Springs.

The restaurant celebrated its grand opening Friday. But there was no fanfare or ribbon-cutting, because for Liseno, it was business as usual. That means serving filling, simple dishes fast.

"We're serving real, non-processed food," he told 人兽性交. "It's one of the most important parts of our business model."

Liseno began smoking meat and catering a decade ago, and still does so for weddings and other events. He had modest expectations when he started his food truck 鈥� but they were quickly surpassed.

鈥淚 was growing too fast to do the things I was doing,鈥� he said.

鈥淚t was either pump the breaks and slow it down, which is really not my forte, or put the pedal to the metal and see what we can make out of this.鈥�

Next, Liseno started looking to open a restaurant in Auburn. But when someone recommended聽177 N. Cayuga St. in the village, it was appealing both financially and because of its commercial kitchen.

The Bearded Bear features that kitchen in an open concept. He expects much of his business to be takeout, but there are 18 seats in the dining area for customers to relax and enjoy their food.

Liseno added that the atmosphere of the restaurant is family- and community-friendly. It currently sells water and soft drinks, and he's in no rush to obtain a liquor license.聽

鈥淚 was thinking about walling (the kitchen) off, but I鈥檓 a people person,鈥� he said. 鈥淚 couldn鈥檛 see myself yelling back and forth and not having a good time with everybody.鈥�

What's on the menu at The Bearded Bear

Food is a family affair for Liseno, a proud Italian.

For the last 10 years, he and his family have lived in Fleming. He grew up in the Jordan-Elbridge area, but spent much of his childhood in Auburn. His grandmother lived on Washington Street.

鈥淚 come from a long line of people who like to eat,鈥� he said. 鈥淓verything was based around food, and I grew up loving to cook.鈥�

Liseno said the family matriarch's inspiration can be found on The Bearded Bear's menu. The creamy cornbread souffl茅, a cornbread side with the consistency of mashed potatoes, is her recipe.

There's also the Great Depression-inspired greens and beans, comprised of cannellini beans and spinach.

Those side options join barbecue staples like pork belly burnt ends and brisket, and desserts like smoked banana pudding and cheesecake with smoked caramel drizzle.

Like the low-and-slow approach to barbecue, Liseno has a three-part menu plan. Currently, the food truck menu is available at the Union Springs restaurant.

That will be expanded with a specials menu of "fun stuff" like ribs and shotgun shells, or bacon-wrapped pasta shells that are grilled and filled with meat, cheese and anything else that can fit inside.

The third part is bulk orders. For instance, customers can order Texas-style brisket by the pound, with sides based on portion size.

But there's always room for more when it comes to barbecue. Union Springs can become "a monster" in the summertime, Liseno said, so there will be no shortage of need for catering.聽

鈥淭here are so many different kinds of barbecue,鈥� he said. 鈥淚 don鈥檛 think there鈥檚 anything wrong when it comes to the food.鈥�
