SKANEATELES 鈥 Thirty years of community and fine cuisine is written on the walls of Rosalie's Cucina, which celebrates the milestone anniversary this fall.
The Skaneateles restaurant's owner since 2019, Marc Albino, took it over from Gary Robinson after 16 years working as a chef there.
At one point, Albino considered a new paint job. Customers had been signing their names to the walls since聽Phil Romano, the Auburn native who also founded national chains Fuddruckers and Romano's Macaroni Grill, opened the West Genesee Street restaurant in 1995. He named it after his sister because she wanted a place of her own. But a year after it opened, Rosalie passed away from cancer.

The signatures began as a reward for those who donated to cancer research causes. Over 30 years, they've added up.
Ultimately, Albino decided to add a clear coat to the walls to protect that history.
He continues to build on the restaurant's foundation of love with a Tuscan food and beverage experience that's every bit as thoughtful.
鈥淭he dining experience begins when you open the car door,鈥 Albino told 人兽性交 in the restaurant's dining room.
鈥淭here鈥檚 a flower and herb garden under the trellis in the parking lot. You鈥檒l walk past the grapes, and you鈥檒l smell the bakery.鈥
Aside from those aromas, patrons are greeted by live music two nights a week, including authentic Italian music by local duo Paolo & Felice聽on Saturdays.
"Fridays and Saturdays never felt more alive," Albino said.

A menu full of favorites
Albino, an Auburn native, started at Rosalie's as a sous chef in 2003 upon graduating from culinary school in Philadelphia and working at kitchens in Kentucky and Alabama.
He bought the restaurant with his wife, Kassie, after what he called a "heart-to-heart" with Robinson that made him realize the time was right to fulfill his goal of owning one.
The creativity of food still captivates the chef, who considered majoring in criminal justice at one point.聽
鈥淚t was my grandmother who got me into cooking,鈥 he said. 鈥淪he鈥檇 teach me to cook things I loved, like apple pie.鈥
But Albino has made few changes to the one-page menu, which has mostly remained consistent the last 30 years.
Depending on the time of year, some dishes will be freshened up with ingredients that are in season. Specials are made with the same philosophy, which is also meant to reduce food waste.
Albino said one of the best items on the menu is the Rosalie's Carpaccio. The starter features rare beef slices with a medley of vegetables, caper mayo, olive oil and fresh Parmigiano Reggiano cheese.
The Insalata Alicia shows the restaurant's connection to its customers. Named after one who loved it, the salad has聽a grilled romaine heart, candied bacon, mozzarella and a clover honey vinaigrette.
Narrowing down just one favorite entree was a challenge for the chef. The聽Farfalle con Pollo (chicken and bowtie pasta) is a staple. The ribeye, which comes with a house-made fig steak sauce, is another popular option. There鈥檚 also the Cappa Santa, scallops and prosciutto over angel hair pasta with basil, spinach and tomatoes, all drizzled with lemon butter.
For dessert, the homemade Banana Budino is a highlight. A cinnamon sugar phyllo shell is filled with bananas and banana cream pudding, and garnished with caramel sauce and almond cookies.
A miniature version of the dessert is served to guests when Rosalie's caters weddings. When served out of the restaurant's food trucks, it's deep-fried.聽

'A lot of creativity to be explored'
From the restaurant to its bakery to its food trucks, Rosalie's is full of familiar faces who make the experience memorable, Albino said proudly.聽
Lisa Alibrandi brings "balance" to the restaurant as its manager, he said. Matt Stock manages the food trucks at local events. A recent addition is Tanner Reed Scarr, the new bar manager.聽
Maple syrup from Mottville Maple is just one of the local ingredients Scarr incorporates into his craft cocktails, along with sourced microgreens and edible flowers.
"There's a lot of creativity to be explored," Scarr told 人兽性交. "That's why people come to the area, to taste the local flair and get inspired."
The food truck business came to fruition during COVID-19. Stock told 人兽性交 the restaurant now has two trucks to help meet demand, and they are registered in five counties. Customers can聽enjoy a variety of sandwiches, truffle macaroni and cheese, and smash burgers. Stock said staff will tailor menus for smaller events, and even work around other trucks鈥 menus.聽
